A Casafrassi è riuscito a valorizzare le caratteristiche di ogni singolo vigneto dando un'impronta giovane e moderna alla presentazione e alla personalità dei vini dell'azienda. Un'altra importante attività dell'azienda Casafrassi curata ed ampliata da Giovanni Vidali è l'allevamento della Cinta Senese, una razza di suini autoctona del Chianti in via di estinzione.
